Ingredients

  • 1 lb hot dogs cut into 1" pieces
  • 6 medium russet potato cubed into 1" cubes. Any baking potato like Yukon will do as well
  • 3 medium yellow onion sliced into 1" pieces
  • 4 – 6 tbsps Caribbean Spice mix or any spice mix you like to put on roasted potatoes, like steak spice, etc
  • 2 cloves garlic crushed
  • 1 1/2 cups sauerkraut optional
  • 1/4 cup olive oil

Instructions

  • heat oil in a large pan on medium high, then cook the hot dogs til their colour darkens and they begin to firm up- about 5 minutes, then remove from the pan with a slotted spoon
  • While the hot dogs cook add the potatoes to a large mixing bowl and toss with the oil, then add the spice mix and toss more to fully coat all the potatoes
  • Once the hot dogs are out of the pan add the potatoes and cook on medium with the lid on for 20-30 minutes until almost fork tender, stirring occasionally
  • Add the hotdogs, onions, garlic and optional sauerkraut back to the pan, stir around to full combine, cover and cook another 10 minutes, stirring occasionally
