Someone mentioned Enchiladas to me earlier this week and it reminded me that I haven’t eaten enchiladas in, like, forever! Then No Frills had a crazy good cheese sale. So I bought 3kg of cheese and made enchiladas!

Someone mentioned Enchiladas to me earlier this week and it reminded me that I haven’t eaten enchiladas in, like, forever! Then No Frills had a crazy good cheese sale. So I bought 3kg of cheese and made enchiladas!

Ingredients

  • 2 cups chicken , cut into strips
  • 1 28 oz black beans , drained and rinsed cans
  • 2 small strips green pepper cut into
  • 1/2 cup green onion , chopped (plus extra to garnish)
  • 1/2 cup cilantro fresh , chopped (plus extra to garnish)
  • 1/2 cup corn
  • 1 tablespoon lime juice
  • 7 u2013 10 tortilla small
  • 2 1/2 cups cheddar cheese shredded sharp
  • sour cream (for serving)
  • chili powder
  • garlic powder
  • salt and pepper /

Instructions

  • preheat oven to 375F
  • grease a 9xd713 baking dish
  • Season the chicken with the chili powder, garlic powder, salt and pepper. Cook through in a large pan (2 u2013 4 minutes, stirring occasionally)
  • In a large mixing bowl, mix together chicken, beans, peppers, corn onions, cilantro
  • For each tortilla lay down some cheese, then the filling. Roll and place in the baking dish, seam down
  • When the dish is full cover the tops of the tortillas with half the remaining cheese
  • Evenly coat with the sauce, then evenly coat with the remaining cheese
  • Lightly cover the dish with tin foil, then bake for 30 mins.
  • Remove tin foil and bake another 2 mins.
  • Serve with sour cream, onions and cilantro
