Beer Batter Crepes

They’re like fancy delicious pancakes that you stuff with other fancy delicious stuff! This recipe is for spinach, tomato feta and ham, swiss, tomato, but the combinations are endless!

Ingredients

  • 1/2 cup beer (I used a Czech Pilsner)
  • 1/2 cup milk
  • 3/4 cup flour
  • salt
  • 2 egg
  • 1 cup spinach
  • 1 tomato roma , diced
  • 1 tbsp chopped garlic
  • butter for frying / sauteing
  • 1/4 cup feta cheese crumbled
  • 1/3 cup swiss cheese shredded
  • 1/3 cup Ham shredded deli

Instructions

  • In a medium sized mixing bowl, whisk together the eggs, beer, milk and a pinch of salt
  • Slowly add the flour while continually whisking. Cover the bowl with plastic wrap and put it in the fridge.
  • Saute the spinach with the garlic and a bit of salt.
  • When the spinach is done, put it in a small mixing bowl, add some tomatoes and the feta. Toss to combine.
  • To make the crepes, heat a 10u2033 pan on medium high, melt a tsp of butter
  • Take a ladle of batter with one hand, hold the pan off the flame with the other. Pour the batter in the center of the pan and immediately tip it in a circlular motion to spread the batter thin.
  • Return the pan to the heat and cook til the batter doesnu2019t look too goopy (30 u2013 45 seconds) flip and repeat.
  • Add another tsp of butter for each crepe, recipe should make roughly 4
  • For the ham and swiss crepe, after you flip it immediately sprinkle the cheese and ham down the middle and cover the pan to melt the cheese.
  • To build the spinach crepe, just spread the spinach down the center of a crepe then close it.
